raw carrots, peeled (20 oz)raw potatoes, peeled (27 oz)granulated sugar (2 lb)margarine (1 lb)raisins (20 oz)dates, chopped (20 oz)walnuts, chopped (12 oz)all-purpose flour (1 lb)baking soda (4 tsp)cinnamon, ground (1 tbsp)cloves (1 tbsp)nutmeg (1 tbsp)salt (1/4 tsp)
Peel and grate potatoes and carrots.Cream sugar and margarine on medium speed, using flat beater. Add raisins, dates and nuts to creamed mixture. Add carrots and potatoes. Mix on low speed until blended. Combine dry ingredients. Add fruit to mixture. Mix on low speed until blended. Portion mixture into greased muffin pans. Pre-heat oven to 350 and bake for 40 - 45 minutes. Serve warm with vanilla or rum sauce. Makes 45 - 48 muffin sized portions.
