Curry Lime Chicken

1 Cup Basmati Rice2 Cloves Garlic1 Tbsp Olive Oil2 Boneless/Skinless Chicken Breasts, Cut into strips1 Scallion chopped1 large Carrot chopped1/2 head Cauliflower cut into florettesJuice of 1 limeGround CuminRed CurryGround Cayenne PepperSalt and Pepper
In medium pot, heat 1 Tbsp of Olive Oil (I use Harissa flavored for extra zip).
Infuse the garlic by placing into the oil, but do not let it burn.
Toast the Basmati Rice in the oil to lightly color, then pour in 1 1/2 cups water. Remove the garlic and once the water reduces to the level of the rice place lid and simmer on low heat for 20 minutes.
In a skillet, heat remaining Olive Oil, add chicken breast strips, scallion and chopped carrott. Before the chicken completely cooks, add the lime juice, spices and let ingredients simmer for 5 min.
Serve together, Makes 4 1 1/2- cup servings
