White Bean Chicken Chile

1 Tbsp Olive Oil2 Med Red Onions, chopped(Optional 2 Stalks Chopped Celery)2 Garlic Heads, Minced2 (4oz) canned chopped green chiles2 Tbsp Ground Cumin1 tsp Cayenne Pepper4 Dashes Tabasco Sauce2/3 tsp Dried Oregano5 Cups Chicken Stock4 Dups Diced, Cooked Chicken (I used canned Costco Chicken)4 (16 oz) cans Navy Beans (washed)1 Large can White or Red Kidney Beans1 tsp Lime JuiceSalt and Pepper to tasteChopped Green Onions
Heat Oil in a large (and I mean large) dutch oven over medium high heat. Add the onions (celery if using) and garlic for about 5 minutes or until soft. Add the chilies, cumin, cayenne, and tobasco; cook for about 10 minutes. Add chicken stock, cooked chicken, beans, and lime juice. Cook over low for at least 1 hour, adding more stock if necessary. Season with pepper (and salt if you want). Add chopped green onions about 5 minutes before serving. Enjoy!
