O'brien Hash Browns

Ingredients
4 Large potatoes1 Medium onion1 of each green, red, yellow, orange bell peppers2 eggs4Tbsp(1/4 c) of all purpose flour1/4 cup Extra Virgin Olive Oil
Directions
Shredded potatoes, onion, and peppers in a food processor
heat EVOO in non stick skillet over medium to medium high heat.
add egg flour to potato, onion, pepper mix stir well
U can either fry a serving up at time or dump the whole thing in @ once. If you doing per serving use a little EVOO @ time. Fry for 5 mins stir, and repeat until golden brown.
