Ingredients
Olive Oil, 1 tbspOnion, 1/2 cup finely choppedGarlic, 2 cloves, minchedRoma tomatoes, 4, choppedArtichoke Hearts in water, 14oz can, drainedBlack Olives, canned, sliced, 1 small can drainedGreek Seasoning, 1/2 tspChickpeas (garbanzo beans), 1 1/2 cupPepper, black, 1/4 tsp Lettuce, 2 cups, shredded Reduced Fat Feta Cheese, 4 ozBread, pita, whole-wheat, 4 pita, large
Directions
1. In a 10-inch heat oil over medium-high heat, add onions and cook until tender. 3-5 minutes. Add garlic and stir constantly for 30 seconds until fragrant.

2. Stir in tomato, artichoke hearts, chickpeas, olives, Greek seasoning, and pepper. Cook until everything is heated through.

3. Top with lettuce and cheese. Cook, covered, for 1 to 2 minutes more or until lettuce starts to wilt. Serve with pita slices.
