Crusty Bread

Ingredients
flour, water, yeast, salt
Directions
Combine ingredients. Dough will be fairly wet, soft. Let rise in covered bowl at least 2 hours, 5 is better. Cut dough in half. Shape into loaf and put on parchment-covered baking sheet that has been dusted with cornmeal.

Let rise again 40 minutes. Place empty roasting pan in oven on bottom rack. Preheat oven to 450.

Cut slashes in loaf. Pour 1 cup water into roasting pan and put bread on middle rack, closing door quickly. Bake 30 minutes until brown. Let cool completely.

Rest of dough can be saved in refrigerator up to 1 week, covered. When ready to bake, let sit at room temp 2 hours before shaping. Bake as above.
