New Mexican Green Chili Stew

Ingredients
3 - 4 lb port stew meat, cut into 1-1/2" cubes1 large onion, coarsely chopped4 cloves garlic, peeled but left wholesalt1-1/4 lb fresh poblano chilies4 - 5 fresh jalapeno chiliesrice wine vinegar, about 1-1/2 Tbl
Directions
Place all in saute pan just large enough to hold the meat in a single layer. Season generously with salt and add enough water to just cover.
Bring to a boil, reduce heat, partially cover and simmer for 1-1/2 - 2 hours or until pork is very tender.
