organic tofu (extra firm)(dices into 2 cm squares)spinach(1 bunch)garlic(2 cloves)onion(0.5 large)cumin seeds (1tbs)ginger root(1 inch slice)salthcoriander powder (1tbs)garam masala(1tbs)
boil spinach and blend it in a blender once soft.
In a hot pan, add oil and let it heat up.
Add cumin seeds, diced garlic, grated ginger and chopped green chilli to it.
after few seconds add onions to heat and heat untill brown.
Add garam masala, coriander powder, salt to it.
once the mixture looks glazed with oil, add the blended spinach to it.
cook the mixture untill the spinach turns darker green in color.
Add diced tofu to it and cook for another 2-3 mins.
