AJ's Eggplant Parmesan

Ingredients
EggplantEgg whiteMarinara SauceMozzarella CheeseParmesan CheeseBread Crumbs Fresh Basil
Directions
slice eggplant into1/2 in rounds and dredge in egg white then in bread crumbs. Shake off excess crumbs.Layer breaded eggplant in the bottom of a 9 x13 sprayed with Pam. Top with Marinara sauce, chopped garlic, low fat or skim mozzarella cheese, then sprinkle with Parmesan. Cover with foil.
Place in preheated 350 degree oven for 30 min.
Top off with Basil for show and added taste
