Mini-Chocolate Chip Muffins

Ingredients
1 cup white flour3/4 cup whole-wheat flour1/4 cup sugar3 Tbsp. unsweetened cocoa powder1 1/2 tsp. baking soda1/4 tsp. salt3/4 cup skim milk1 cup unsweetened applesauce1 Tbsp. canola or grape seed oil1 Tbsp. molasses2 tsp. vinegar1 tsp. vanilla1/2 cup miniature semisweet chocolate chips
Directions
1.Preheat oven to 350 degrees. Coat 12 muffin cups with nonstick cooking spray; set aside.
2. In a bowl combine flours, flax meal, sugar, cocoa powder, baking soda, and salt. Make a well in center of flour mixture; set aside.
3. In another bowl combine milk, applesauce, oil, molasses, vinegar, and vanilla. Add to flour mixture. Stir until moistened (batter should be lumpy) Stir in chocolate chips.
4. Spoon batter into prepared muffin cups, filling three-fourths full. (I just divide evenly between 12 cups).
Bake for 20 minutes or until tooth pick inserted in center comes out clean. Cool in pan on rack for 5 minutes. Remove from muffin cups; serve warm or cool completely. Wrap tightly and freeze up to 3 months if you desire. Reheat to serve. Makes 12 regular muffins.

    You can substitute cranberries or other dried fruits. Delicious. These freeze well and make a fabulous lunch dessert at work. - 1/17/11
