Caprese Sandwich

Ingredients
1 french baguette, sliced in half lengthwise1 clove garlic, peeled & cut in half2 lg tomatoes, sliced4 oz fresh mozzarella, sliced12-15 leaves fresh basil leavessalt & pepper, to taste1 T olive oil
Directions
Preheat broiler. Broil baguette cut side up 6" from heat for about 2 minutes, until the inside is lightly toeased. Rub each half with a half clove of garlic, the crusty bread will release the garlic's essential oils, giving you instant garlic bread.

Layer the bottom half fo the baguette alternating with slices of tomato, mozzarella and basil leaves. Season evenly with salt & pepper. Finish with a drizzle of olive oil then top with the other baguette half. Cut the whole sandwich into 4 pieces.
