Broccoli Cauliflower Soup

Ingredients
Two tablespoons extra virgin olive oilOne onion, dicedOne carrot, choppedOne celery stalk chopped1/2 a head of cauliflower, choppedstalk of broccoli, choppedA couple of tablespoons of Dijob mustardChicken Stock
Directions
Sautee onion, carrot and celery in oil over medium heat until onion is translucent. Add remailing ingredients, cover with chicken stock (add water if necessary) and simmer for half an hour or until veggies are soft.
Blend using an immersion blender.
Makes 8 servings.
