Buffalo Chicken Meatloaf "Cupcakes"

--Cooking Spray--2/3 c uncooked, old-fashioned oats--1/2 c skim milk--1/3 c Franks Red Hot Wings sauce--1 pound uncooked, ground chicken breast--1/4 c celery, finely chopped--1/4 c carrot, finely chopped or shredded--1/4 c onion, finely chopped--2 egg whites--1/8 t table salt--1/2 c (56g) reduced fat crumbled blue cheese
Preheat oven to 350F. Lightly mist a cupcake pan with cooking spray.
Combine oats & milk in a medium-sized bowl and mix well. Let stand 3 minutes or until oats are softened. Stir in hot sauce until thoroughly mixed. Add chicken, celery, carrot, onion, egg whites, and salt. With fork or hands, mix ingredients well. Add blue cheese and gently mix.
Transfer mixture to pan, splitting evenly into 10 "cupcakes". Sprinkle on a few dashes of hot sauce or wing sauce onto each "cupcake".
Bake 35-40 minutes or until chicken is no longer pink.
Serving size=1 meatloaf "cupcake".
