Spinach lentils and rice

Ingredients
1 medium onion, halved and sliced3 cups fresh spinach2 tbsp olive oil1.5 cups lentils1 cup white rice
Directions
Saute onions in olive oil until browned. Add spinach, reduce heat, and wilt with stirring. Set aside.

Add lentils to medium saucepan with enough salted water to cover. Simmer for 15 min. Add rice. Add enough water to cover. Simmer for 25 min or until rice and lentils are tender.

Add spinach and onion mixture.
