2 lbs chicken breast boneless cut into small chunks1 large diced zucchini1 can cream of mushroom soup 98% fat free1 can cream of chicken soup 98% fat free1 can artichoke hearts diced2 boxes stove top stuffing low soduim2 cup chicken broth1 cup water2/3 cup light sour cream
preheat oven to 400 and spray 13x9x2 baking dish with cooking spray
heat water and chicken broth to warm touch add to stuffing mix and toss to moisten the stuffing set aside
place diced chicken and veggies in baking dish add the canned soup and sour cream toss to combine and coat all chicken and veggies season with salt and pepper and garlic powder
spread stuffing over chicken mixture bake for 40-50 minutes until chicken is cooked through
serves 8
