Broccoli/Cauliflower Soup

Ingredients
20 oz. frozen chopped broccoli10 oz. frozen cauliflower2 cups chicken broth1 cup fat-free half-and-half1 tsp. salt1/2 tsp. pepper2 cups grated Swiss cheese
Directions
In a 4-qt. stockpot, cook the broccoli & cauliflower in the broth until tender, about 15 min. Let cool. Puree in a blender or food processor, leaving the soup a little chunky. Return the soup to the stockpot. Add the half-and-half, salt & pepper. Heat over low heat for about 45 min. Stir in the Swiss cheese.
