Chicken-Vegetable-Barley soup

1/2 pound chicken breast1 1/2 cups chopped celery1 cup chopped carrot1 cup chopped onion3 garlic cloves, minced1 tsp dried thyme1 tsp dried herbes de Provence2 quarts chicken broth2 cups water (optional)1 cup barley2 cups fresh spinachsalt and pepper
Spray dutch oven with Pam. Saute onion, celery, garlic, carrots till onion is tender. Add herbs and shredded chicken. Add broth and combine. Add barley. If too thick after barley is cooked, add the water. When soup is done, season to taste with salt and pepper. Stir in spinach and cook until it wilts. Serve.
