Thai Chicken Stir-Fry w/ Spicy Peanut Sauce

2 whole chicken breasts, skinless, boneless-cut in bite-size pieces1/2 c. peanut butter1/2 c. water2 T. soy sauce1 T. brown sugar2 T. peanut or vegetable oil2 or 3 cloves garlic, minced1/2 t. crushed red pepper3 to 4 c. sliced broccoli or spinach
In a small bowl, blend peanut butter, water, soy sauce & sugar; set aside. In a wok or large skillet, heat oil over high heat. Add garlic & pepper; stir fry 30 seconds. Add chicken, stir-fry til firm & white, about 5 min. Add broccoli or spinach, stir-fry til bright green, about 3 min. Stir in peanut butter mixture. Cook, stirring constantly til sauce is smooth, about 3 min. Serves 4.
