Not your Grandma's pumpkin Muffins

Ingredients
1 cup Whole Wheat Flour1 cup All Purpose Flour1 Tbsp Baking Powder1 tsp Baking Soda1 Tsp salt½ tsp Ground Cloves1 tsp Cinnamon1 tsp Ground Nutmeg2/3 Unsweetened Applesauce1 (generous) Cup Canned Pumpkin1/3 cup white sugar1/3 cup brown sugar, packed1 Large Egg2 Egg Whites2/3 cup Fat Free Milk
Directions
Preheat oven to 400. Coat a 12-hole muffin tin with cooking spray and/or line with cupcake wrappers if desired.

Combine flour, baking powder, salt, baking soda, cloves, cinnamon and nutmeg in a large bowl;

Combine applesauce, pumpkin, sugar, eggs and milk in a medium bowl; mix thoroughly with a wooden spoon.

Add applesauce mixture to flour mixture and mix until completely incorporated.

Pour batter into muffin tins until each hole is about 2/3 full. Bake for 20-25 minutes, or until a tester inserted in the center of a muffin comes out clean.


Optional: Mix 8oz 1/3 fat cream cheese, 1 cup powdered sugar, and 1 tsp vanilla for frosting.

    It is quite good for a super low fat muffin...I just used two eggs instead of the egg white. I also cheated on the spices, adding two tsp of pumpkin pie spice and omitting the others - 3/14/11
