Couscous confetti salad

Ingredients
1.5 cups dry couscous2 cup boiling water4 scallions1 red bell pepper1 carrot2 cups red cabbage1/2 cup fresh parsley1/2 cup golden raisins or chopped dried apricotsJuice of one lemon1/4 cup seasoned rice vinegar1 tblsp olive oil1 tsp curry powder1 tsp salt
Directions
Combine couscous and 2 cup boiling water. Stir to mix, then cover an dlet stand until all water has been absorded, 5-10 minutes. Fluff with a fork. Dice vegetables in a food processer and add to couscous. Mix lemon juice, vinegar, oil, curry and salt, and add to salad. Serve at room temp or chilled. Makes eight 1-cup servings.
