Yummy Breakfast Casserole

Ingredients
1/2lb canadian bacon1 med. onion chopped5 baking potatoes- cooked, cooled, shredded6 eggs, beaten1 1/2 c. cottage cheese2 c. cheddar cheese, shredded1 1/4 swiss cheese, shredded
Directions
In a large skillet, cook bacon and onion until bacon is crisp. In a large bowl combine remaining ingredients. Stir in bacon and onion mixture. Transfer to greased 13x9 baking dish.
Bake, uncovered, for 35-40 min, or until set and bubbly. Let stand 10 min. before cutting. Makes 12 4-inch servings.
