Crustless any veggie quiche

Ingredients
6 eggs1 c coconut milk unsweetened1/2 c frozen spinach1/2 c frozen corn1/2 c chopped onion2 med carrots1 clove garlic1/4 c fresh parsley3 fresh basil leavesSalt pepper to tasteOlive oil to grease pan and saute veggies
Directions
Makes 8 servings

Sauté veggies in oil, put in 9" round baking pan
Mix eggs and milk and spices
Pour egg over veggies
Bake at 375 for about 30 min
