Hearty Breakfast Oatmeal

1 cup Steel cut Oats1 TBSP unsalted butter4 Cups boiling water1-2 tsp ground cinnamon2 TBSP raisins, dried cranberries, dried blueberries or other dried fruit2 TBSP chopped walnuts, almonds or pecans ( or a mix of nuts)1/4 cup MilkSweetner (optional)
Boil 4 cups of water.
Melt butter in large pot over medium high heat. Add oats and toast oatmeal slightly. The oats will look golden and smell nutty. Usually about 1-2 minutes if your pan is nice and hot.
Add boiling water to oats and stir to ensure oats don't stick to the pan. Reduce heat to low simmer and simmer oats for 20-25 minutes until most of the water is absorbed and the oats are creamy in appearance. Stir the oats occasionally to prevent sticking and burning oats on the bottom of the pot.
Add Cinnamon, Nuts and Raisins to the oatmeal just before it's done and mix well.
Top with 2 tsp of milk and sweetener of choice if desired.
Serving size = 1/3 cup

i make my oats very much identical to the above recipe. its great, the cinnamon adds such a good flavour that u dont need to add any sugar. the nuts and dried fruit add a bite that we crave for when im eating to make me feel like i am eating :) Really do keep me up til lunch! - 3/11/11
