Sizzling Ginger Pork

1 tsp. olive oil8 oz lean pork1/2 c fat free low sodium chicken broth1/2 medium red onion2 tblsp chopped ginger2 tblsp low sodium soy sauce1 tblsp molasses1 tblsp szechuan seasoning
In skillet heat oil, add pork and cook quickly until browned but not cooked all the way through, remove meat from pan.
Add half the broth to skillet, then add onion and ginger. Simmer for a few minutes until softened. Add remaining broth, soy sauce, molasses, and seasonings. Bring to a simmer and return the meat to pan. Simmer for few minutes longer, until meat is cooked through. Seave with brown/wild rice and broccoli. Makes 2 - 1 1/4 c servings.
