Pesto Chicken Lettuce Wraps

Ingredients
2 medium chicken breasts (2 cups chopped) or the white meat of a roasted chicken works too!1 large green pepper (1 cup chopped)1 medium onion (3/4-1 cup chopped)Olive Oil (1/4 cup)Pesto packet (dry)Diced Water Chestnutssalt and pepper to tastewaterFresh Romaine Lettuce (for bigger leaves)
Directions
Chop up pepper and onion very fine. I used my pampered chef chopper. (Almost minced). Sauté pepper and onion in large frying pan with olive oil (10-15 minutes). Add salt and pepper to taste. Follow directions on pesto packet, mix with the water and olive oil. Add to onions and green peppers. Next, add a can of diced water chestnuts (depending on how you like it, you may want to chop). Chop up the chicken and add. Let simmer together on low for 10 minutes.

Wrap in lettuce. Or, if you would rather use a wrap, try a low-carb, high fiber wrap....a tomato basil flavored wrap would be delicious with this mix! Enjoy!

    This is soooooo good!!!! I have made this a couple of times and it is great everytime. I added some red pepper flakes in one batch for a little heat and it was awesome.

    I was the only one in my family that loved Pesto until they tried this recipe! Now they all love it and ask for me to make it! My kids even love to put this over noodles. I did not include the water chestnuts as one of my daughters is allergic. - 3/30/12
