17 Bean and Barley Soup

Trader Joe's 17 Bean and Barley Mix - 1 - 16 oz bagImagine Organic Vegetable Broth Low Sodium, 2-32 oz containers - (this brand is creamy delicious)Olive Oil, 1 tbsp Onions, raw, 1 cup, chopped Green Peppers 1 cup, chopped Celery, raw, 1 cup, diced Carrots, raw, 1 cup, chopped 1 tsp dried basil5 cloves of garlic, minced1 bay leaf1/2 tsp Italian seasoningsalt and pepper to taste14 oz can diced tomatoes, low or no salt
Prepare beans by soaking over night or bringing to a boil with 3 times as much water as beans. Let soak 1 hr, then drain. Add the broth and bring to a boil, then simmer.
Saute veggies, basil and garlic in oil until soft. Don't burn the garlic! Add mixture and remaining ingredients to simmering beans. Simmer for 1 hour or until tender.
Throw in some chopped chicken if you have some meat eaters in the family.
Makes 16 -1 cup servings -Plenty!
If you can't find the Trader Joe's bean mix, most stores will have a 15 bean dried mix.
If you want to decrease the calories a little more, add more broth.
