Crust: 1.5 c almond meal or crushed raw almonds1 tbsp butter salted1 large egg1 tsp nutmegFilling:1 15 oz can of pumpkin1 tsp salt1 tsp cinnamon, cloves, and, nutmeg or pumpkin pie spice2 eggs12 oz almond milk, unsweetenedLiquid stevia, about 10 drops
Mix almond meal or crushed almonds, 1 egg, nutmeg, and butter. Press into 9 in pie pan. Bake alone at 400 deg f for about 15 min. Remove from oven & set aside. Mix filling; pumpkin, spices, 2 eggs, almond milk, salt, & stevia. Mix by hand until well blended. Pour filling into pie dish over almond crust. Bake at 350 for about an hour or until the center is set and a toothpick comes out clean. Makes one 9 in deep dish pie.
