Turkey Mushroom & Zucchini Burgers

1 lb ground turkey, 93/71/2 cup onion, diced finely8 oz mushrooms, diced finely1 cup zucchini, diced finely1 tbsp olive oil1/4 cup dry bread crumbs1 egg, beaten1 tbsp dried dill weed1 tbsp dijon mustard
Saute the onion, mushrooms, zucchini and garlic in the olive oil until soft and translucent, about 5-10 minutes. Add to the bread crumbs in a separate bowl and set aside until cool, about 15 minutes.
Add ground turkey, egg, dill, mustard, salt and pepper to the mushroom mixture. With dampened hands, form the mixture into four equal size patties.
Preheat your grill or skillet to medium high heat. Brush the burgers with a little bit of olive oil to prevent sticking, and place on grill. Cook until no longer pink in the center, about 5-7 minutes per side depending on the temperature of your grill. (Internal temp should reach 165 degrees)
Serve with a whole wheat bun if you like and all your burger fixins! I use avocado as a spread with a little lettuce and these burgers disappear! Enjoy!
