Low Carb Cheese Cake

2 pkgs Philly cream cheese (8 oz each) at room temperature1 cup Xylitol3 lg eggs1/3 cup sour cream2 Tbsp corn starch3/4 tsp pure vanilla extract1/4 tsp sea salt
Preheat oven to 325. Line 8 x 8 baking pan with enough foil to overlap sides by 2 inches, coat with cooking spray.
On medium speed beat cream cheese and xylitol until smooth, 2 minutes. Beat in eggs one at a time. Add sour cream, vanilla and salt. Beat until smooth and fluffy. 1-2 minutes.
Transfer to pan. Bake 40 minutes or until set. Cool 30 minutes. Using foil lift out of pan and cool completely on rack. Return to pan; cover. Refridgerate overnight.
