Black Bean Soup

Ingredients
1 Tbsp EVOO1 medium onion, chopped1 medium red pepper, chopped3 medium carrots, chopped3 cloves garlic, chopped2 tsp. chili powder1 tsp. cumin1/4 tsp. pepper2.5 cups vegetable broth3 cans black beans1 can corn1 can diced tomatoes
Directions
Heat EVOO in pot.
Saute onion, red pepper, carrots and garlic until soft.
Add chili powder and cumin. Stir.
Add vegetable broth. Stir.
Add 1.5 cans of beans (no need to drain) and the corn (drain first). Stir. Bring to boil.
Meanwhile, in blender, blend the other 1.5 cans of beans with the diced tomatoes (not drained).
Add to pot. Stir. Reduce heat and simmer for 15 minutes.
