Ingredients
*rice*cream of chicken or mushroom soup made with 1/2 can of milk or water*canned chicken*various veggies (raw or cooked) examples: sliced celery, canned corn, canned veggies(heated or cold), frozen veggies(heated), fresh veggies, olives (I did calorie count with mixed frozen veggies)*canned pineapple *raisins*chow mein noodles*mozzerella cheese (can substitute cheddar)
Directions
Cook the rice.
Mix the soup and canned meat and heat until warm
Layer on your plate: 1/2 c rice, 1/4 c soup mix, cheese, veggies and fruit as desired, and 1/4 c chow mein noodles.

We would have this as a pot luck in college....everyone would bring their favorite toppings or veggies.

    I add low-sodium broth the the soup & chicken. I love fresh bell peppers & zucchini & mushrooms on it. This is my favorite, favorite meals!! The nice part is that you can make it more healthy by using brown rice & extra veggies. - 9/17/09
