Curried Couscous

Ingredients
1 1/2 cups couscous1 tablespoon unsalted butter1 1/2 cups boiling water1/4 cup plain yogurt1/4 cup olive oil1 teaspoon white wine vinegar1 teaspoon curry powder1/4 teaspoon ground turmeric1 1/2 teaspoons kosher salt1 teaspoon fresh ground pepper1/2 cup grated carrots1/2 cup minced parsley1/2 cup dried cherries or Craisins1/4 cup sliced almonds2 scallions, thinly sliced1/4 cup diced red onions
Directions
A. Pour couscous in a large bowl, melt butter in the boiling water and pour over couscous.
B. Cover tightly and set aside for 5 minutes.
C. In a medium bowl, whisk together the yogurt, olive oil, vinegar, curry powder, turmeric, salt and pepper.
D. Fluff the couscous with a fork and pour the curry mixture on top, mixing well.
E. Add the carrots, parsley, currants, almonds, scallions, and red onions.
F. Mix well and adjust seasonings.
G. Serve at room temperature.
