Quinoa Tabouli

Ingredients
1 cup dry Whole Grain Quinoa (makes almost 2 cups cooked)1 tbsp olive oil2 tbsp lemon juice1 large cucumber, peeled, chopped3/4 bunch fresh parsley, destemmed, chopped finely4 small tomatoes, choppedSea salt
Directions
Cook quinoa according to package directions. When still warm, add all ingredients and stir well. Put in refrigerator to cool for at least 15 minutes, or more if you have time, before serving.

Adjust lemon, salt, and parsley to taste.

Makes 6-8 servings.
