Squash and Apple Bisque

Ingredients
Directions
1 butternut squash (2pounds) - peeled and cubed1 medium onion - chopped1 can chicken broth2 cups apple sauce1/2 tsp ground ginger1/4 tsp salt1 cup sour cream
Mix all ingredients except sour cram into 3.5 - 6quart slow cooker.
Cover and cook on low for 8-10 hours. (or until squash is tender)
Use an immersion blender to smooth the soup. (if you don't have one, you can do it in the blender, but make sure to take the center vent out of the cover, and then put a towel over the top to stop spills!)
Stir in sour cream. Cover and cook an additional 15 min.
(perhaps skip the sour cream... more squash or less applesuace... maybe some cumin?)
