Kimmy's Roasted Butternut Squashaliscious Soup

1 Large Butternut Squash, Peeled and Cubed1 Medium Onion, Quartered1 Carrot, Peeled and Cut into Chunks1 Apple, Peeled and Chunked1 Head of GarlicThymePoultry SeasoningOreganoNut MegCinnamon1/2 Cup Skim MilkVegetable Broth
Makes 6-8 Servings.
Place 2 tablespoons of oil, squash, onions and carrot in roasting pan and roast at 420 degrees for 45 min.
Wrap Head of garlic in foil and place in oven beside roasting pan.
After 30 min mix in apple.
Meanwhile bring vegetable broth and spices to a boil. When squash is tender remove from onion and mix in with broth mixture. Take out garlic, peel and mix in broth mixture. Heat on medium for 15 min.
Pour mixture into blender with a half cup of skim milk and puree. Pour back into pot, simmer, and enjoy!
