Tuscan Pork w/ White Beans

2.5 c. dry white beans or navy beans1 TB minced fresh sage2 tsp. kosher salt1 tsp. ground fennel seeds8 garlic cloves, minced2.5 lb. boneless pork tenderloin5 c. water2 bay leaves
Night before, sort and wash navy beans. Cover with water to 2" above beans and let stand for 8 hours. Drain the beans.
Combine all ingredients into crock pot and cook for 8 hours on high. Later pull pork apart into chunks and serve w/ the bean mixture. Discard bay leaves.
Makes 8 servings.
