Crockpot Ground Turkey Chop Suey

1 pound ground turkey1 onion, chopped1 6-oz. package long-grain and wild rice mix1 3/4 cup water3 Tbsp. low-sodium soy sauce, divided1 12-oz package frozen stir-fry veggies1/2 pound fresh mushrooms, sliced
In a large skillet, brown the meat with the onions until it is brown and crumbly. Drain off any fat. Put the meat mix into a 3 1/2-quart crock pot. Stir in the rice mix (including the seasoning packet), water and 2 tablespoons soy sauce.
Cover and cook on high heat setting for 2 hours. Stir the rice/meat mixture. Stir in the veggies and mushrooms. Cover and cook on high heat about 30 minutes longer, until the rice is tender and vegetable are still crisp-tender. Stir in the remaining 1 tablespoon soy sauce and serve at once.
