Asian Chicken Soup

Ingredients
2 boneless, skinless chicken breasts3 cups chicken stock2 jalapenos, sliced lengthwise3 cloves garlic, smashed, skin-on1 piece of fresh ginger, 1/8 in. thick, smashed1 package ramen noodles, seasoning packet discarded1/2 cup cilantro, chopped1/2 cup scallions, sliced
Directions
Heat chicken stock with garlic, jalapeno and ginger. Bring to a boil and simmer for 15 min. Poach chicken breasts in broth for 15-20 min., then remove and let cool. Remove the garlic, ginger and jalapeno pieces. Chop the chicken into bite-size pieces. Add the chicken and ramen noodles. Cook 5 min., or until noodles are done. Top with cilantro and scallions. Makes 2 large bowls.
