Anya's Egg Free Carrott Muffins

Ingredients
2 cups finely grated raw carrots1 1/3 cup all purpose flour or a combination of white and whole wheat3/4 cup granulated sugar2 tsp gr. cinnamon1 tsp gr. nutmeg1 1/2 tsp Baking soda1 tsp baking powderEner G egg sub. for 3 eggs1/4 cup canola or vegetable oil1/2 cup apple sauce
Directions
Preheat oven to 350 F. Sift dry ingredients together. In another bowl mix wet ingredients (for egg substitute use 1 1/2 tsp of Ener G with 2 Tbsp of warm water for each egg). Whisk the wet ingredients together and incorporate them into the dry ingredients, mixing until just moistened. Scoop batter into 11 regular sized muffin tins and bake for 20 - 30 minutes or toothpick inserted comes out clean.
