Cheesy Vegetable Quiche

2 small zucchini1 tbsp. minced garlicPinch of Cayenne PepperBlack Pepper4 eggs1/2 cup of whole wheat flour1/4 tsp. baking powder1/4 tsp. salt1 1/3 cup of milk2 Tomato - sliced1 oz of light mozzarella cheese1 ounce cup of fat free cheddar cheese or mozzarella cheese1/4 cup of scallionsParsley (optional)For someone who doesn't like a particular vegetable, I top that on half, so they don't have to get it, kind of like a pizza!
Preheat oven to 400
In a skillet, add some vegetable spray and add zucchini, and garlic. Sprinkle with black pepper and some cayenne for some spice.
In a large mixing bowl, whisk together eggs, flour, baking powder and salt. Whisk in milk, then add mozzarella cheese, one diced tomato and zucchini mixture.
Pour quiche base into prepared pan. Top with remaining tomatoes and cheddar cheese. (optional) Sprinkle with parsley for color.
Bake for 25 minutes, or until center is set and the outside edge is golden brown.
Let set for 5 minutes, then slice and serve.
