Veggie Chilli w/ Lentils

Ingredients
1 tbs Olive Oil1/2 Onion, diced1 Med. Red Bell Pepper, diced1 Carrot, diced1 cup Frozen Corn1/4 cup Dried Lentils1 Chipotle Pepper in Adobo Sauce, seeds removed, chopped1 tsp Ground Cumin1/2 tsp Chili Powder1 tsp Garlic Powder1/4 tsp Salt1/4 tsp Ground Cayenne Pepper1/4 tsp Smoked Paprika2 cans Dark Red Kidney Beans, Drained2 cans Diced Tomatos
Directions
1. Heat Oil in large pot over medium heat. Add onion, red bell pepper & carrot. Saute until soft.

2. Add corn, lentils, chipotle pepper and spices. Stir for about a minute.

3. Add in beans and tomatoes. Stir. Cover and simmer on Med-low for about 30 minutes.

Tip: Serve over brown rice or add in some whole wheat pasta.
