Chinese Garlic Chicken

Ingredients
1 pound chicken breast w/o skin cut into 1/2 inch cubes3 Tbsp reduced sodium soy sauce, divided2 Tbsp unsweetened apple juice, divided4 cloves garlic, chopped2 green onion stalks cut on the diagonal (includes green and white parts)1 Tbsp olive oil1/4 tsp red pepper flakesOptional - add any vegetables you choose
Directions
Remove any skin from the chicken breasts and cut into 1/2 inch cubes. Place in a ziploc bag and add 1 Tbsp of the soy sauce and 1 Tbsp apple juice. Set in the fridge and allow it to marinate at least 30 minutes and no more than a few hours.

Chop garlic cloves and set aside. Cut green onions on the diagonal and set aside. (If you have never used green onions before please note that you use both the green and the white part of the onion, only discarding the roots.)

In a small bowl mix remaining apple juice, soy sauce and red pepper flakes.

When chicken has marinated heat olive oil in a wok or large skillet over high heat. When oil is very hot add chicken and stir fry for a few minutes. Add onions and garlic. Pour remaining ingredients in and stir fry until chicken is no longer pink in the middle.

Serve over rice. We love to add broccoli to ours but any veggies would be great.

serving size is about 1/3 cup without veggies added to it.

    It was good. I would let it marinade longer as well. I made it with chinese fried rice and it was good. Keep an eye on the olive oil in the pan. Mine started to burn before I got the chicken in! - 3/20/11
