Blueberry Cheesecake Bars

Ingredients
CRUST1/2 cup all-purpose flour1/2 crushed graham crumbs3 TBS Splenda Granulated Sweetener3 TBS Butter or margarineFILLING8 OZ tub style Light Cream Cheese1/2 cup (4 oz.) non-fat Cream Cheese, at room temperature2/3 cup Splenda Granulated Sweetener1 large egg1 large egg white3/4 tsp Vanilla Extract1/4 tsp Almond Extract1 cup fresh Blueberries
Directions
1. Preheat oven to 325 degrees F. Coat an 8 x 8 inch square pan with cooking spray.

2. To make the crust: Mix the flour, graham cracker crumbs, and sweetener together in a medium bowl.

3. Cut in butter with a pastry blender or by hand until the mixture resembles fine crumbs. Pour the crust mixture onto the bottom of the prepared pan and press into an even layer. Bake the crust for 5 minutes and then set aside.

4. While the crust is baking, make the filling. Beat the cream cheese and sweetener together in a medium size bowl with an electric mixer. Beat in the egg, egg white, and extracts until mixture is just smooth. Do not over mix. Gently fold in the blueberries.

5. Pour the filling onto the crust and spread evenly. Bake for 23 to 25 minutes or until the edges are firm and the center is set but still slightly soft.

6. Cool at room temperature for 20 minutes. Then refrigerate at least 2 hours before cutting into bars.
