Ingredients
4 ears sweet corn4T mayo or mexican sour cream4T unsalted butter softened6T crumbled questo fresco or mild feta cheeseground chili powder for sprinklingsalt for sprinklinglime wedges for serv optional
Directions
bring lg saucepan of salted water to boil; add corn & cook until tender; about 5-7min. transfer corn to platter & allow them to cool slightly. Using serrated knife remove the kernels; divide the corn into 4 individual cups. Put 1 T may & 1T butter into each cup. sprinkle with cheese, chili powder & salt. Serve with lime wedges
