NM Enchiladas

Ingredients
Chicken Breast, no skin, 4 breast, bone and skin removed Sour Cream, 3 cup Onions, raw, 3 cup, choppedChicken Broth, 3 cup (8 fl oz) Corn Tortillas, 38 tortilla, medium (approx 6" dia)Olive Oil, 1 cup Cheddar Cheese, 4 cup, shredded *Green Chili Peppers, canned, 3 cup
Directions
boil chicken - let it cool, then debone, skin, and shread. Cook onions in 2 tablespoons olive oil until tender - in a seperate pan soften corn tortillas in oil individualy (pat excess oil off the tortillas with a paper towl). Mean while mix sour cream, chicken broth, onions, and shreaded chicken simmer till liquid thickens. Now let the good times roll - - Layer tortillas at the bottem of an ungreased baking dish - then the mixture - then cheese...keep doing this and top with remaining cheese. Bake at 350 for about 20 minutes. This will depend on your taste if you perfer a softer creamer texture or a more crispy texture...have fun!
