Blue Cornbread (Gluten Free)

2 1/2 C Gluten Free (GF) All-Purpose Baking Flour1 3/4 C medium ground whole grain blue cornmeal1 C Sugar3/4 tsp baking powder3/4 tsp baking sodapinch of seasalt1 3/4 C non-fat milk1 Tbl apple cider vinegar3 large eggs, beataen3/4 C Canola oil(options: You can add 1 1/2 C corn kernels, and or 1/3 C Pine Nuts)
Preheat over to 350. Butter 13x9x2-inch glass baking dish.
Mix dry ingredients together in one large mixing bowl.
Whisk together liquid ingredients in a medium sized bowl.
Add wet ingredients to dry and mix just until until blended. Fold in optional ingredients at this time. Pour batterinto prepared dish. Bake until test inserted into center comes out clean, about 40 minutes. Cut into 2x2" squares and serve warm. Approx. 20 servings.
