Killer Marinated Tofu

Ingredients

1 block extra firm tofu1/4 to 1/2 cup low-sodium soy sauce1 tsp sesame oil1 Tbsp maple syrup1 tsp red wine vinegar1/2 tsp garlic powder1 dash cayenne powder1 tsp sesame seeds (optional)
Place tofu on a plate, with paper towels under and on top of it. Put another plate on top and something heavy (like a phone book) on top of that. Let sit 30 minutes to press out water.
Preheat oven to 350 degrees.
Mix all the other ingredients in an 8x8 pan. Slice tofu into 8 slices, and lay them in the pan, turning once.
Bake 20 minutes, then turn the tofu. Add more soy sauce if the liquid is low.
Bake another 20 minutes or until all marinade is absorbed.
Makes 4 servings of 2 slices each.
