SBD Tomato- Basil Couscous Salad

3/4 cup cooked plain couscous (cook without olive oil or butter, but may add salt)1 tomato, chopped1/3 cup canned chickpeas, drained and rinsed2 scallions, chopped1 tsp extra-virgin olive oil1 Tbsp lemon juice1 Tbsp chopped fresh or dried basil (fresh is tastier, but sometimes all i have on hand is dried)
Simple combine the ingredients in a bowl and toss!
Serve on a bed of lettuce if desired
Makes 7 43 calorie servings (thats the amt of servings it says in the book, as it is meant for a side dish) But as a lunch, i usually eat 3 servings, so thats what the nutritional information is for. If you intend to eat it like that as a meal, this recipe makes 2 1/3 servings.
