Turkey Meat Pizza (with pineapple)

Ingredients
Pizza Dough1 1/4 cups very warm water1 packet dry yeast3 3/4 cups whole wheat flour (I used the lighter version by king arthurs)2 TBS olive oil2 TBS coarse sea salt2 TBS sugar2 TBS minced garlic2 TBS italian seasoningsPam non-stick spray2 TBS White Corn MealSauce1 jar Ragu pizza sauce1 can tomato paste2 TBS minced garlic1 TBS splenda 1 TBS italian seasoning1 TSP dry oregano1 TBS dry basilTOPPINGS3 Hot Italian Turkey Sausages cooked16 slices turkey bacon cooked68 slices turkey pepperoni1 cup chopped green onions1/2 cup pineapple tidbits4 cups part skim mozzarella cheese shredded
Directions
In a large bowl dissolve yeast in the warm water for 5 minutes. Add in the next 6 ingredients and blend till it all comes together. ( I generally use a heavy duty mixer with a dough hook but this can be done by hand) Turn dough out on to a floured surface and knead till smooth and elastic. If using the mixer, mix on low speed approximately 10 minutes. After kneading spray bowl with Pam and then place dough in the bowl and lightly spray the top of the dough. Allow to rise in a warm draft free area approximately 1 1/2 hour.

While the dough is rising prepare the remaining ingredients.

Sauce
Put all ingredients in a small sauce pan and cook until the tomato paste is dissolved and the sauce is heated through.

Toppings
Cook the sausage per package instructions then cut into small 1/4 inch rounds. Cut the bacon into small pieces and crisp in a frying pan. The pepperoni can be used straight out of the package. Strain the pineapple.

Preheat oven to 450 degrees.
After dough has risen punch dough down and divide into two balls. Flatten each ball into 12 inch round disks by pushing, rolling and stretching until you get the desired size. Dust a pan or baking stone with 1 TBS of corn meal and place dough one at a time on the pan to top with half of each remaining prepared ingredient.
Top each pizza with 2 cups of mozzarella cheese.
Bake in 450 degree oven till cheese is melted and bubbly and beginning to brown. Approximately 25 minutes per pizza. Note: Bake one pizza at a time or the crust or top will not cook properly.

This recipe makes two pizzas. Cut each pizzas into 8 equal pieces. Each piece is one serving.
