Broccoli Rice Casserole

Ingredients
1 can low fat cream of chicken soup1.5 cups Minute Rice 1 small onion, chopped1 cup cooked broccoli, chopped1 tsp margarine0.5 cup nonfat milk0.5 cup shredded cheddar cheese
Directions
Saute onion in margarine until brown. Cook rice as per instructions on box. Mix soup and milk in a small bowl. Combine onion, rice and soup in a casserole dish and sprinkle cheese over the top. Bake in 350 degree oven for 30 minutes. Makes 6 servings.

    I love this, I did use velveta the velveta lite , 80 cal for 2 oz I use 6 oz , so I am sure the cali. count may be different , but if the chedder cheese is not the low fat , i doubt if it is much different. - 4/1/09
